Our challenge was to provide as much space for the restaurant, of which separate sections can be opened and closed during the day, while proving enough space for the half open kitchen, which can be seen from the restaurant through the pass.
The bar with the partition between the front and the middle part of the restaurant has hand made old fashioned glass in lead paneling to give the rustic look and feel of a Le Pain Quotidien restaurant.

A Belgian specialist for the typical LPQ plaster of Paris was flown in to teach the local teams how to establish the required wall finishes.
Minimizing the staff bathrooms and changing rooms as well as the required bar storage and office, we managed to provide a very efficient plan for ample space for the walk in fridge, partly open kitchen, seen here trough the pass, food storage, dish wash area and of course the maximum space for the restaurant.
Localization of the international renowned brand outlet meant that HVAC systems needed to be provided, a major challenge in a space without external air or chill water.
The guest bathrooms required to face a particular direction to comply with Vastu, an Indian science of construction.
All the services are placed in the basement, from where all supply is handles, weigh and checked.
